Jackfruit tacos

For the tacos: | |
6 | small corn tortillas |
some | shredded red cabbage |
Cilantro (coriander leaves), soy yogurt, lime juice |
What is Jackfruit?
Jackfruit is a gigantic tropical fruit. Most of the time it's used as a sweet ingredient for desserts or just eaten as a snack. But lately, the fruit has risen to fame as a meat substitute thanks to its pullable consistency. Burgers, tacos, and stews are just some of the dishes that have gotten the jackfruit treatment. When it's unripe, jackfruit has a neutral flavor, lending itself perfectly to just about any dish with the right combination of spices. The flesh has a stringy consistency that resembles pulled chicken, pork or beef.
Preparation:
- Drain the can of jackfruit and pull into small pieces with your hands. Discard the hard part at the end.
- Warm the coconut oil in a pan on medium-high heat. Cook the jackfruit until it turns golden-brown.
- Season the jackfruit with cumin and paprika. Add the tomato paste, soy sauce and maple syrup and cook for another few minutes.
- For the dressing: Mix all ingredients in a bowl.
- Quickly warm the tortillas in a warm oven or pan.
- Fill the tortillas with jackfruit, red cabbage and coriander. Top with the peanut sauce, some soy yogurt and lime juice.
- Enjoy!
