Our tip
You can make this recipe with an apple, instead. Dice into small pieces or grate it and it'll mix in wonderfully.
Preparation:
- Add the pancake mix, water and cinnamon to a shaker or a bowl. Whisk or shake until a smooth batter is formed.
- Cut the banana into pieces. Heat a pan with coconut oil until hot.
- Pour the batter into the pan in 1/4-cup portions. Press the banana pieces into the batter as the pancakes cook. Cook until golden-brown on both sides.
- Serve the banana pancakes on a plate. Top with the remaining banana pieces and some maple syrup if desired.
